Tasting notes: pale straw colour. Aromas of white nectarine, lemon sherbet, struck match and butter popcorn. Peach and lemon rind, medium bodied, lingering acidity and mouth-filling flavours. 

About the name: Rocket Science is a tongue in cheek reference to the fact that it really doesn’t take much to make good wine – just good fruit and careful handling.

The Chardonnay was sourced from a little vineyard called Smallwater Estate, planted in the late 90's by the legendary John Small, a few kilometres south of Donnybrook. The fruit was hand-picked by family, friends and backpackers and chilled in the coolroom overnight. In the morning the fruit was tipped into the press to gently extract the juice, which went straight into new and seasoned large format oak and left for wild fermentation to occur. High solids in the juice ensured a complex resulting wine. The wine was left on lees in oak until November. Minimal Suphur Dioxide was used. Vegan friendly.
