How

The Fruit

Dream Bird Wines are crafted from scrupulously sourced fruit from the South West of Western Australia.

Generally preferencing vines in the Geographe and Margaret River Wine Regions, each year I work closely with my close-knit clan of growers to hand-pick parcels of fruit.

Every day I am navigating the playground of South West grapes – carefully seeking out quality, certain soils, sub-climates, and vines.

From Ferguson Valley Malbec to Wilyabrup Chenin Blanc, and just about everything in between – I am always looking to source each wine variety from its own perfect pocket of Western Australia.

This approach is pretty relentless, but at the end of the day it has built an incredibly thoughtful and expressive portfolio of Dream Bird Wines over the years.

Are there dreams of a Dream Bird vineyard? Of course. But that wish has yet to take flight.

The Winemaking

“It’s not going to be great wine if it’s not good fruit.”

My viticulture origins are the absolute foundations of my winemaking practices, with a lot of attention and groundwork being laid in the vineyard with the growers.

The unapologetic chaos from which Dream Bird Wines has emerged is a credit to the balance struck between the scientific mind and artistic heart.

At the end of the day, I am taking an incredibly honest and expressive approach to winemaking (and in my eyes, it is all about texture).  Skin contact, lees and solids are the building blocks of my textural winemaking techniques at Dream Bird Wines. Everything else, just flows on from there.
